Joachim practices a market cuisine of the season since he changes his menus to use the best ingredients available at each season, at each day. It’s a cuisine of the senses, a cuisine of light, the light that is so dear to the southern European countries and to Lisbon in particular. It’s a cuisine of love since all ingredients are prepared daily at the restaurant so as to not compromise the quality of the food our guests enjoy at the restaurant. This is true for all the stocks, sauces, pasta, desserts.... It’s a sophisticated and esthetical cuisine, that seeks not only to nourish but also to offer memorable gastronomic experiences.
